The first sekt of the Balaz Winery!

We've been looking forward to it for a long time, we've been working on it for three years, and it's finally here in the spring of 2023.

It all started with sparkling wines. Our Freshsecca became a bestseller, and customers were asking more and more often about sparkling wine. We decided to venture into traditional, bottle-fermented sparkling wine. 

Do you remember what you were doing on October 2, 2020?

We certainly did—at the Mlýnská vineyard in Dolní Dunajovice, we harvested Chardonnay and Pinot Blanc for our first sparkling wine. The primary fermentation took place here, followed by the preparation for the secondary fermentation, which is now underway at the sparkling wine producer. Interestingly, we blended the base wine for this sparkling wine with Australian winemaker Mike Mazey. The wine aged in the bottle for 24 months. We chose the Austrian sparkling wine house Szigeti because our collaboration with them on semi-sparkling wines has proven successful, and their premium sparkling wines of the highest quality are recognized not only in Austria but also worldwide. 

After nearly three years, the Cuvée Chardonnay & Rulandské bílé, Extra Brut 2020 is here. A beautifully balanced vintage sparkling wine that we will produce only in vintages that allow us to source the highest-quality grapes. From the 2020 vintage, we bottled 1,055 bottles full of elegant and delicate bubbles. This sparkling wine has a lemon-yellow color, with delicate aromas of citrus zest, fruit, marzipan, and butter cookies. On the palate, it will enchant you with its fresh yet gentle acidity and a subtle salty note. It’s the ideal wine for celebrations, a gift that will delight even connoisseurs, a perfect aperitif, and a wonderful accompaniment to a menu featuring seafood or sushi. 

For those who love numbers: 80% Chardonnay, 20% Pinot Blanc, residual sugar 3.0 g/l, acidity 5.0 g/l, alcohol 11%, 20-year-old vineyard, harvested on October 2, 2020, bottled on March 25, 2023.
