It all started with sparkling wines. Our Freshsecca became a bestseller and customers increasingly asked for sparkling wine. We decided to venture into traditional, bottle-fermented sparkling wine.
We did, on the vineyard Mlýnská in Dolní Dunajovice we harvested Chardonnay and Pinot Blanc for our first sparkling wine. We had the primary fermentation and subsequent training for the second fermentation, which already takes place in the sparkling wine cellar. Interestingly, we blended the base wine for the sparkling wine with Australian winemaker Mike Mazey. The wine was aged in the bottle for 24 months. We chose the Austrian sparkling wine producer Szigeti because their cooperation has proven successful with sparkling wines and their premium sparkling wines of the highest quality are recognised not only in Austria but also worldwide.
After almost three years, the 2020 Cuvée Chardonnay & Pinot Blanc, extra brut is here. A beautifully adjusted vintage sparkling wine that we will only produce in vintages that allow us to obtain the highest quality raw material. From the 2020 we bottled 1055 bottles full of elegant and delicate bubbles. The sparkling wine is lemon yellow in colour, with a delicate aroma of citrus peel, fruit, marzipan and butter biscuits. On the palate, it will enchant you with its fresh but non-aggressive acidity and slightly salty touch. An ideal wine for celebrations, a gift that will delight even connoisseurs, a perfect aperitif and an accompaniment to a menu of seafood or sushi.
For the lovers of numbers: 80% Chardonnay, 20% Pinot Blanc, residual sugar 3.0 g/l, acid 5.0 g/l, alcohol 11%, 20 years old vineyard, harvested on October 2, 2020, bottled on March 25, 2023.
