The heat is good for the grapes and they are ripening. The vintage at the Baláž Winery is approaching. Today we checked the ripeness of the grapes in the vineyard, which is measured in degrees of sugar content (CNM or Czech Standardized Must Meter).
The natural sugars in the grapes enable the whole fermentation process and the must becomes wine. When to harvest is up to us winemakers to decide and is another step, after the quality of the raw material, by which man enters the natural process that is wine making. The Solaris variety already has 25.5 degrees of CNM, so it is high time to process the grapes. Tomorrow they will go into the cellar 😉. We measured 17 degrees CTM for Muscat and 15 degrees CTM for Kerner, so they will be in the vineyard for a while 👍 and will ripen nicely.
