Latest News from the Vineyard

The heat is good for the grapes, and they are ripening. The grape harvest at Baláž Winery is approaching. Today we checked the ripeness of the grapes in the vineyard, which is measured in degrees of sugar content (ČNM, or the Czech Standardized Must Meter).

The natural sugar in the grapes enables the entire fermentation process, and the must turns into wine. When to harvest is up to us winemakers, and—after selecting high-quality raw materials—it’s another step in which we become part of the natural process that is winemaking. The Solaris variety has already reached 25.5 degrees ČNM, so it’s high time to process the grapes. They’ll be heading to the cellar as early as tomorrow 😉. We measured 17 degrees Brix for the Muscat and 15 degrees Brix for the Kerner, so they’ll stay in the vineyard a little while longer 👍 and continue to ripen nicely.
